Walnut Milk
I came across this at the beginning of my veganism journey. There are other non diary milks other people swear by, almond milk, soy milk, pecan milk…. but this is my favourite. Walnut milk is a brilliant and truly delicious substitute to cows milk. Actually a superior, healthier and tastier option due to it’s high nutritional value. Walnuts are a rich source of omega 3 & 6 fats, which everyone knows are essential in our diet. Promotes brain and bone health. So do give your full fat, semi-skimmed or skimmed milk a break every now and then and give this a try.
Ingredients:
1 cup Walnuts
4 cups Water (Depending on your preference on consistency. I aim for 3 1/2 cups water)
3-5 Pitted Dates (Depending on how sweet you want it)
1 tablespoon Vanilla extract
To begin with, you can soak walnuts for 4 hours to remove bitter tannins if you wish. (I don’t bother as we don’t soak walnuts before eating)
Drain water and put walnuts, water and dates in a high powered blender and blend. Blend until it looks smooth and milky.
Then add vanilla extract and blitz for a few more seconds.
Strain with a cheesecloth/muslin cloth (Or a nut milk bag if you happen to have it) over a bowl or a jug.
The pulp can be discarded or used for other scrumptious vegan cookie recipes.
Pour into a clean container to be refrigerated for a maximum of 3 days only.
Enjoy on it’s on or on cereals, smoothies, shakes….. anything that calls for milk!
