<p>4 Tbsp Chickpea flour (In place of all purpose flour)</p>
<p>3rd of a cup of Extra Virgin Olive oil</p>

<p>Directions:</p>
<p>Whizz everything in a food processor, adding the Amaranth Flour (or Baking flour) and the Chickpea Flour (or All purpose flour )last and whizzing again.</p>
<p>Roll mixture into little balls and place on a greased baking sheet. Put it into a preheated oven at 200-250 degrees for 15 mins.</p>
<p>Enjoy!</p>

<p>Great in a pitta pocket with spinach tomato and hummus. Or if you&#8217;re wheat intolerant like me, forgo the pitta and enjoy with a spinach, tomato and avocado salad with a bit of hummus</p>

			<content:encoded><![CDATA[<p>Allergy to Sesame Seeds is apparently the 9th most common allergy in the world. Who knew?! So unfortunately for sufferers they can&#8217;t enjoy the popular middle eastern dip, Hummus. I love hummus! But not so much the store bought ones with Tahini. Not because I have an allergy to Sesame but I just don&#8217;t like how it tastes with Tahini. So decided to make my own without the Tahini. A delicious recipe that Sesame Allergy sufferers and non sufferers can enjoy too. While we&#8217;re at it, let&#8217;s have a look at a few health benefits of the main ingredient. Chickpeas.</p>
<p>&nbsp;</p>
<p>Health Benefits of Chickpeas:</p>
<ul>
<li>Low in fat</li>
<li>Hight in dietary fiber</li>
<li>Rich in Vitamins &amp; Minerals</li>
<li>A great source of Protein, Folic Acid and Manganese</li>
<li>Low in Glycemic Index so great for Diabetics too</li>
</ul>
<p>&nbsp;</p>
<p>Ingredients:</p>
<p>200g Canned Chickpeas (I sometimes use a 240g tin or 2 of chickpeas. Making a big batch comes handy)</p>
<p>2 tbsp Lemon Juice</p>
<p>2 Cloves of Garlic (or less if you wish)</p>
<p>1 Large roasted Red Pepper (Available in jars at supermarkets)</p>
<p>1 1/2 &#8211; 2 tsps Ground Cumin</p>
<p>1 tsp Ground Coriander</p>
<p>2 tbsp  Olive Oil (add more if you wish. I like to use Extra Virgin)</p>
<p>1tsp Cayene Pepper (Or less if you wish. I love the spice)</p>
<p>Pinch of Sea Salt</p>
<p>Directions:</p>
<p>Drain chickpeas and rinse well.</p>
<p>Put all ingredients in a bowl suitable for blending and blend. I find it really easy to blend with a hand blender. A normal blender</p>
<p>will be a bit of a nightmare to clean I think.</p>
<p>Once it&#8217;s all blended into a creamy puree, serve and enjoy with crudites or warm pitta bread.</p>

			<content:encoded><![CDATA[<p>Almond Butter is nutritious, delicious and filling. I love the stuff!! It&#8217;s a good source of protein, rich in vitamin E, helps control blood sugar and in my opinion better than peanut butter. The manganese and copper found in almonds also help with energy production in the body. So when in need of an energy boost, chomp on a few almonds or  a couple of tablespoons of almond butter. It makes a great healthy snack to have on it&#8217;s on, spread on crackers or toast or mix into your smoothies. And best of all it&#8217;s so easy and quick to make. So ignore the store bought almond butter with unhealthy additives/preservatives and give this a try.</p>
<p>&nbsp;</p>
<p>Ingredients:</p>
<p>1 Cup Roasted Almonds</p>
<p>2-3 Tablespoons Olive Oil</p>
<p>Optional: Pinch of  Salt and Honey or Agave Nectar to sweeten</p>
<p>&nbsp;</p>
<p>&nbsp;</p>
<p>Directions:</p>
<p>Roast almonds if still raw. When lightly toasted, you end up with a butter that is lighter in colour and more almond-y in taste. Roasted them for a few minutes longer, until they are turning brown, and you get a much darker butter with strong almost choclatey undertones. I prefer the middle ground. Roasting for about 8 mins at 250 degrees. Keep an eye on them as they burn pretty quickly.</p>
<p>After roasting, put almonds (and pinch of salt if you wish)  in food processor and blitz. Add olive oil  (And honey or agave nectar if you wish) and continue processing until mixture reaches desired consistency. For a more creamier consistency, blend the almonds in the food processor for longer.</p>
